All recipes were invented at some point, right? Yes, and the legacy of butter chicken is quite interesting. The recipe of butter chicken was created by a chef named Kundan Lal Gujral, hailing from Delhi. It's not possible to discuss the creation of butter chicken without talking about its precursor tandoori chicken. K L Gujral ran a restaurant in Peshawar, Pakistan. There he came up with his unique form of tandoori chicken. Coating the chicken pieces with yogurt and spices, he placed them on the tandoor, a type of clay oven. The meat took on a crispy exterior texture and smoky flavor. Tandoori chicken is known for its succulence which comes from the yogurt that keeps the meat moist. In the 1950s, Gujral had to flee from Peshawar because of conflicts caused by Partition of India. He settled in Delhi and opened his restaurant named Moti Mahal. Back in the time, lack of refrigeration compelled Gujral to come with a way to prevent the unsold tandoori chicken pieces from drying out. That is when he decided to immerse the chicken pieces in gravy of tomato, onion, and cream. This way, he kept the tandoori chicken moist. What was just a means to save wastage turned to be a new invention? Today, there are many variations of the original butter chicken recipe. Such is the appeal of this dish that different regions across India have given their own twist to it to make it their own. |
